Specialty coffee refers to the highest quality coffee beans that are carefully cultivated, harvested, processed, and roasted to highlight unique flavors. Unlike commodity coffee, which is mass-produced and often over-roasted to mask poor quality, specialty coffee is evaluated based on its quality and graded above 80 points on a 100-point scale by certified Q graders.

Specialty coffee is grown in specific regions known for their ideal climates and soil conditions and the beans are handpicked to ensure only the ripest cherries are used. The meticulous processing methods help retain the beans' distinct flavors and aromas.

Specialty coffee involves direct trade practices ensuring that farmers are fairly compensated for their high-quality produce. This not only supports the farmers' livelihoods but also encourages sustainable farming practices. Additionally, the specialty coffee producers we work with prioritize environmental sustainability, employing methods that reduce waste and promote biodiversity.

The higher prices of specialty coffee reflect its superior quality, ethical sourcing, and sustainable production methods, offering a richer, more satisfying coffee experience.

The flavor notes in specialty coffee describe the natural tastes and aromas that are inherent to the coffee beans and their roast profile. These notes (which are somewhat subjective) are not added flavors but result from the unique growing conditions, processing methods, and roasting techniques. They highlight the coffee's origin and quality, offering a rich and diverse tasting experience.

HowShouldIStoreMyCoffee?

To keep your coffee tasting its best, store it in an airtight container away from light, heat, and moisture. We suggest buying whole beans and using a burr grinder to grind them just before brewing (whole beans stay fresh longer than pre-ground coffee). Enjoy your coffee within 3 months of the roast date for the best flavor. Our bags have special degassing valves that release CO2 while keeping oxygen out, so your coffee stays as fresh as possible!

DoYouOfferDifferentRoastsTypes?

We craft our coffees to be as balanced and sweet as possible, and we custom-create our roasting profiles based on the green coffee we source. While we don't categorize our coffee by roast level, generally speaking, most of our coffees are light roast, with the exception of our coffees that we recommend for espresso, which are light-to-medium roast.

Shipping&Fulfillment

We're a small roastery, so our roasting schedule varies by demand. We ship orders Monday through Friday the day after an order is placed. Please contact us if you have any special shipping requests at hello@michecoffee.com.

We currently only ship throughout France and the EU.*

For all orders within metropolitan France, we charge a flat rate shipping fee of €4.99, with free shipping for all orders 50€+. 

For all orders outside of metropolitan France and within the EU, the following shipping rates apply:
